Tide & Table Restaurant Opens at The Falcon Hotel in Bude

A new restaurant has opened its doors in Bude on Friday 20th March, as Tide & Table launches at The Falcon Hotel alongside the Bude Canal.

The new dining space aims to offer a refined yet relaxed experience, with a focus on showcasing Cornwall’s produce and regional suppliers.

A Menu Shaped by Cornwall

Tide & Table’s menu is designed around seasonal availability, with an emphasis on local sourcing and provenance. Dishes will evolve throughout the year to reflect what is being produced across the region.

Menu highlights include Chicken “Cornetto” with almond, maple, onion and chive, as well as Seared Scallops & Hogs Pudding with corn, sorrel, black garlic and bouillabaisse.

Other options include Asparagus Tortellini with pine nut and charcoal (vgo), Roasted Venison Loin with blackcurrant, peach, artichoke and silver birch, and Spiced Confit Trout with almond, pastis, cucumber and smoked thyme.

Seafood also features prominently, with dishes such as Roasted Pave of Cod served with leek, fennel, horseradish and dill.

Desserts and Tasting Experience

Desserts on offer include Lemon Verbena Brûlée, Rhubarb & Custard, Brown Butter & Almond Financier, and a Banoffee Caramel Chocolate Fondant (vg).

A tasting menu is also available, priced at £80 per person. This multi-course option showcases a selection of the kitchen’s signature dishes, with the option to add a wine flight and cheese course.

The restaurant works closely with Cornish producers and regional artisans, with a focus on highlighting the people behind the ingredients. Guests are encouraged to explore the suppliers connected to each dish and learn more about where their food comes from.
