Cornish Kern Named Global Champion at Cheese Awards
Lynher Dairies is celebrating after its award-winning Cornish Kern was named Global Champion at the Global Cheese Awards yesterday (Thursday 11th September).
The dairy said: “We’re all here flying on Cloud 9 because yesterday Kern won Supreme Champion at the Global Cheese Awards. A huge achievement for us and a great recognition of the passion and attention to detail of the people who help us.”
A Prestigious Stage for Cheese Makers
The Global Cheese Awards has been running for over 160 years, offering producers and retailers from around the world the chance to showcase their very best. Thousands of entries are submitted each year, with many exhibitors using their success as part of international marketing campaigns.
Organised annually by the Frome & District Agricultural Society, the event is hosted at their showground near Frome in Somerset in a purpose-built Cheese Pavilion. The competition attracts world-class judges, fierce rivalry across categories, and a public show which regularly welcomes around 20,000 visitors.
Cornish Kern’s Winning Recipe
Cornish Kern is already no stranger to global acclaim, having previously won Supreme Champion at the World Cheese Awards.
Firm to the cut and slightly flaky in the middle, Kern is a hard farmhouse cheese made with milk from Lynher’s own herd of Ayrshires near Truro. Its recipe is derived from a Gouda style cheese, with nutty Alpine starter cultures added to create its close texture.
To achieve its distinct flavour, the curd is scalded to encourage caramelised notes before being pressed into large round moulds. Once shaped, the cheese is floated in a briny bath, painted with a breathable black wax coating and matured for twenty months.
The name Kern, meaning ‘round’ in Cornish, reflects its traditional style. Every wheel is produced at Lynher Dairies’ small rural dairy, the same home where Yarg is also made.
