Budock Vean wins two AA Rosettes under new chef Dale McIntosh

An AA inspector books a table, orders, eats, and says nothing. Weeks later the verdict lands. For the kitchen at Budock Vean, the news beside the Helford this month was two rosettes, and it arrived just as a new name took charge of the pass.

What the award recognises

Budock Vean Hotel & Spa has been awarded Two AA Rosettes for the quality of its food, service and overall dining experience. The four-star independent hotel sits on the banks of the Helford River near Falmouth, and its restaurant has long drawn a crowd for warm hospitality and menus built around Cornwall’s produce.

The restaurant is open to residents and non-residents through the year for breakfast, lunch, afternoon tea and dinner. Guests can eat inside or out on the terrace, which looks over the golf course and the subtropical gardens.

A new head chef in the kitchen

The rosettes come soon after the appointment of Head Chef Dale McIntosh, a familiar name on Cornwall’s food scene. Dale spent more than eight years at Gylly Beach Café, reached the quarter-finals of BBC’s MasterChef: The Professionals, and has built a reputation for putting local ingredients first.

Working with the hotel’s kitchen team, Dale is leaning into relaxed, high-quality cooking made from seasonal, locally sourced and estate-grown produce.

The dishes carrying the award include a twice-baked cheese soufflé with soft blue cheese and a leek and potato velouté, and confit duck with butter bean cassoulet, orange-braised chicory and boudin blanc. There are steamed Westcountry mussels, served either in a spiced tomato, chorizo and shallot sauce or a classic marinière with toasted sourdough. And there is Sole à la Normande, butter-poached sole with oysters, clams, mussels, horseradish and a cucumber sauce.

Budock Vean sits within 65 acres of sub-tropical gardens on the Helford, with a James Braid-designed 9-hole/18-tee golf course, an indoor pool, a Finnish sauna, an outdoor hot tub, a spa, tennis courts and a private foreshore for water sports and boat trips. The spa’s three treatment rooms and nail bar use GAIA skincare products, handmade in Britain with plant actives and essential oils.
