Former Rick Stein Chef Joins Cornwall Gold With New Menu
The Big Cornish Breakfast at Cornwall Gold now turns up on a miner’s shovel. It is the sort of touch the attraction’s new head chef has brought in since taking over the kitchen, and his background goes some way to explaining the ambition behind the rest of the menu.

A new face in the kitchen
Cornwall Gold has appointed Dominic Gill as Head Chef, bringing more than 26 years in hospitality to the role.
Dominic has worked across some of Cornwall’s best-known kitchens. That includes Rick Stein’s restaurant in Falmouth and the award-winning Fox’s Revenge in Newquay, as well as the Loungers group across the South West.
What’s changed on the menu
Since joining, Dom has refreshed the menu at The Cornish Pantry, the café and shop at the heart of the site. The focus has been on taking familiar favourites and reworking them with local Cornish ingredients.
New additions include loaded hash browns, topped with anything from wild mushrooms and truffle oil to Cornish crab, prawns and crayfish. There is also Tarquin’s gin-cured salmon, slow-cooked pork belly and a Davidstow cheese soufflé. The signature Big Cornish Breakfast is served on a traditional miner’s shovel, a nod to the 160 years of history on the site.
Ingredients come from suppliers including The Cornish Crab Company and Brian Etherington Meats.
‘A destination in its own right’
“The Cornish Pantry has so much potential and I’m excited to help make it a destination in its own right,” Dom said. “Cornwall is home to some incredible produce and suppliers, and we’re lucky to be working with some of the best, including The Cornish Crab Company and Brian Etherington Meats. My aim is simple, great food, friendly service and an atmosphere where people can relax and enjoy themselves, all surrounded by the history on site.”
The menu has been designed to suit families, day-trippers and local food lovers alike.
“Whether someone joins us for one of our award-winning breakfasts, a family lunch or just a quick bite between activities, we want them to leave having had a great experience,” he said.
Cornwall Gold is dog friendly, with free parking and free entry, and is open daily.
