Inside Bay Bar’s new cocktail menu at Fistral Beach Hotel

A drink can carry a whole journey. That is the idea behind the new cocktail collection at Bay Bar.

Bay Bar at Fistral Beach Hotel in Newquay has launched a new cocktail menu, one built from years of the team’s international bartending experience and shaped around the character of the Cornish coast.

Overlooking Fistral Beach, the bar has built a name as a spot for relaxed coastal dining and drinking. The new collection marks a step up for its drinks list, with an expanded range of original serves sitting alongside twists on classics and alcohol-free options.

A menu built to tell stories

The menu is split into four categories: Fistral Creations, Fistral Twists, Classic Cocktails and Virgin Adaptations. The team designed it to tell stories through cocktails, encouraging guests to find new flavour combinations while connecting with the landscapes and experiences behind them.

“Over the years, we have explored different cultures, ingredients and flavour combinations, collecting inspiration from every place and experience to create a menu that reflects adventure and artistry,” said Jesus, Duty Manager at Bay Bar.

The signature serve

The standout is T O’Clock, a signature Fistral Creation. It blends Hendrick’s Gin with strawberry, orgeat and cucumber. Delicate floral notes meet ripe berry sweetness and crisp cucumber, and the result is fresh, fragrant and balanced.

Elsewhere the menu reworks established favourites. The Macallan Old Fashioned combines Macallan whisky, demerara sugar and Angostura bitters. There is also a Cornish Martini, made with Tarquin’s Gin or Connie Glaze Vodka, dry vermouth and citrus.

Masterclasses for couples

Bay Bar is also running Cocktail Masterclasses at £90 per couple. Led by the hotel’s award-winning mixologists, each session starts with a welcome cocktail before moving through the art and history of cocktail making. Guests then create their own signature serve, watch a demonstration of a Fistral Favourite, and finish with two mini cocktails looking out over the sea.
